Mochi Waffles with Cooked Pears and Apricot Sauce

Cut 2 ripe but firm pears into chunks. Combine in a saucepan with 1/4 cup apple juice and stir over medium heat for 5-8 minutes.
Stir in a 1/4 cup apricot conserves. Set aside. Spoon fruit sauce over Mochi Breakfast Waffles and serve.

Mochi Breakfast Waffles

And unexpected and tasty variation on traditional breakfast waffles.

There are 2 simple methods to make Mochi Waffles, try either and let us know which one you liked best!

Method # 1

Pre-heat waffle iron on low setting. Cut 1" squares (or strips) of Raisin-Cinnamon, Chocolate Brownie or Cashew-Date Mochi and put a piece in each of the waffle iron sections. You may want to put a final piece in the middle, depending on the size of the iron.

Rest the upper lid on top of the Mochi pieces. When the waffle is ready, the jaws of the iron will have come together and your pieces will be blended into a single waffle. Remove waffle when it is slightly crisp.

Method # 2

For an airier, crunchier waffle, grate 1/2 package of Mochi with a grater. Heat waffle iron, then spread the grated Mochi over the iron to about 1/4" thickness.

Close waffle iron and cool until waffle removes easily from iron. Top with cream cheese, maple syrup and fresh strawberries or peaches. Serve with a hot fruit sauce such as apricot, blackberry or strawberry.

Mochi Croutons and "Bread" Sticks

Arrange on a unoiled baking sheet, allowing room for expansion. Bake in preheated 400 degrees oven for about 8-12 minutes, until crispy, puffy and slightly golden. Serve immediately.

Dip Mochi bread sticks into bean dip, tofu pate, or vegetable spread. For a sweet treat, dip in nut butter, apple butter or jam.

Mochi cruotons are great sprinkled onto soups, stews or salads.

What you will need:

  • Cut Mochi into 3/4" cubes for croutons or 1/2" x 5" long sticks for bread sticks.

Basic Mochi Puffs

Baked Mochi is very easy to prepare. Pre-heat your oven or toaster oven to 450 degrees. With a heavy, sharp knife, cut a strip across and through your Mochi package about 1" wide (you can also cut a groove across it and break it apart).

Cut each strip into four or five pieces. Spread the pieces well apart on a baking sheet, and bake 8-10 minutes until puffed and browned. The Mochi puffs should be crunchy on the outside and chewy on the inside.

Eat them fresh from the oven as is, or slit the puffs open and stuff with your favorite ingredients.
